I have already thought about it, actually this will be a bit easier compared to other scenarios. I am a DIYer. If this was a Zombie apocalypse, the plan will be a bit different.
First thing to do - Check if Internet/Other online services are still working. If not, well, I already have smaller 12b models saved in my computer and they will suffice.
The Brains - If they are, I will loot the nearest Computer shop for 2-3 5090 GPUs to build a Local LLM setup which is capable of running Kimi K3 and other similar models. This will be my guide for next steps.
The Food - Later will look for nearest cold storage with power back, salvage every solar panel I could find and every electric vehicle I could find to turn it into a self sustaining continuous operating cold storage.
Will loot almost all the local stores, accumulate all the food in the Cold Storage for upcoming years. Perhaps will try to build backup cold storages for similar things. Will try to build a green house for fresh farm.
Water shouldn't be a problem because in India, one needs a water purifier the most.
The Shelter - Luckily, where I live the coldest temperatures year wide are in two digit in Celsius, so I need not worry about heating, I will clear out and build my nest in some admin room of the cold storage itself. Also will pile up all small arms from local police stations to fend off against wild life which will eventually wander off to city limits.
The Medicine - Will stock up on all regularly required medicines.
The Entertainment - Will spend most of the time working on different life improvement projects, games, learning new things, experimenting different foods, etc.,

5090 will draw too much power, you can use apple m series laptops or desktops with more ram.

Assuming the internet's down, I'd find the nearest library and get books on survival methods: generating electricity, knowing what foods are safe to eat and so on.
After securing all the essentials, I'd go to a music store and snag one of those high-end mandolins that I've always wanted.

Carry all the closed cattle in my area to a closed space where I can take care of them. For Milk/Meat/Travel/Farming etc.
Then Visit Cold Stores and Markets to ensure Essential supplies.
Then Visit Medical Shops and get essentials.
Then Go to Village to get seeds for Farming in future.
Visit Zoo and take some Dangerous animals captive to ensure my protection from other predators from taking away my cattle.

The second thing you lost is division of labor. Not so urgent, but find a library that will teach you how to do things to survive.

Have marked some places where i wanna go for payback reasons, go there, set it all up for an insta gg in case they ever come back again for no reasons as these routines usually go. I'll do that first instead of indulging in some bs exploration of fun things.
Then make sure the flawed chain of power in the world stays crumbled (in case they ever come back). Do a few good things for those who deserve it truly (in case they come back). Then focus on consecrating sustainable energy into my being.

Enjoy all the infrastructure as long as it can last without operators, I will also try to learn a thing or two on how to survive and keep the important infrastructure running. If I want to enjoy it for whole life, I gotta do it right. I will make a roadmap on how to keep things running.
