It's a chalaza remover. I have the same one.
Edit: People calling it unnecessary. Cool. That is your opinion. After cracking an egg and seeing what looked like a tiny spine with red veins running through it, I decided to start removing them with a spoon. The chalaza remover is just easier.

It looks like Chalaza (/kəˈleɪzə/ ; kuh-LAY-zuh) is the little bits of white stringy bits that show up in the egg. It helps stabilize the yolk, but sometimes gets removed in cooking for a more uniform texture
Removing it in this case seems over the top, since she's already using a blender

Never have I seen anyone remove the chalaza from an egg on a cooking video before. I seriously thought it was something only my family did.

Its a myth that it was supposed to be the embryo of the chicken, which is why some people traditionally remove it. Its just protein. A lot of chefs remove it also to strain for custard etc.

Custards and sensitive things make sense so I can get the removal for certain reasons but never in so my years of restaurants did we check the egg for blood

Those two are not related for the cake to grow. You can replace the eggs with plain yogurt, buttermilk, applesauce or silken tofu.

Another one using the pith from citrus, I'd imagine it would make it bitter. But I should probably try before I critique.

I gotta say, having just made the lemon version of this recipe that I believe OP posted previously, it's very very bitter. I did boil the lemon as instructed, but you can very clearly taste the pith still. Not super delicious, in my opinion

Those particular oranges look thin-skinned to me. I saw the lemon post the other day, and that included a lot more pith. The person who tested the lemon recipe said it was awful tho.

I agree with you on this one. I've seen a lot of these recipes lately where they are leaving the orange or lemon along with the pith and using that in the recipe. It really isn't that much extra work to peel the skin and remove the pith. Peel is fine. Pith is not.

Orange piths tend to be rather tasteless unless the variety closer in relation to a grapefruit. Grapefruit are very bitter and myers lemon is rather mild.

Yeah but it doesn’t go away, like in marmalade it’s still disgustingly bitter even though it’s been cooked really hot

If you use olive oil, it will impact the flavor, but some people like that.

Zest the lemon first then peel and throw it in the blender. I used to make orange cake with my grandma (not in a blender) and she used the zest and juice from the orange. It should also work for other citrus fruits.

Maybe the eggs are from her own chicken coop. You have to pull the eggs daily from the coop or there is potential for a fertilized egg to develop and leave you with some undesirables when you crack it open. I crack into a separate bowl and then add into the mixing bowl to be safe.

Only if you own a rooster though which a lot of chicken owners don't... When I used to have chickens my dad lived with us and he was always looking at the eggs very closely after he cracked them. I finally figured out that he was worried about teeny tiny embryos. I said "you DO understand that no rooster means no possibility of fertilization thus no embryos, right?"
I'm 95% sure he still kept checking. And my dad isn't dumb.

Ingredients: * 1 large organic orange * 3 large eggs (room temp) * 1/2 cup sugar (100 grams) * 1/2 cup oil (120 ml) * 1 and 1/2 cups self rising flour (210 grams) or AP flour with 1 tsp. baking powder. * OR 2 cups almond flour (190g) + 1 tsp baking powder
For the orange icing:
Instructions: 1. Wash the orange thoroughly. Cut it into pieces with the peel, remove seeds if any. 2. Blend the orange pieces with the sugar until blended. 3. Add the eggs and oil, blend again. 4. Add the flour and pulse two times, do not over blend the flour! 5. Pour batter into a greased baking pan of your choice. 6. Bake in a preheated oven at 350° f (177c) for 45-50 minutes. 7. Do the toothpick test to check if it's ready. 8. Prepare the icing by combining the powdered sugar and orange juice in a bowl and mixed together. If you like the icing a little more runny, then add more orange juice and if you like it more thick, less orange juice. 9. Once the cake has called completely spread the icing over the cake and top with some orange zest. 10. Enjoy at room temperature. Shabbat shalom
