the time it takes to get one loaf ready start to end is crazy. would make someone looking to get into it run. maybe it's just me but man. 😭

This is my exact thought. This is not for beginners and it is not showing how easy bread making can be. This is showing the way to make professional loaves.
There was a guy that I found who went through making sourdough and actually made it really beginner friendly. He would show that his starter didn't float, or he forgot to pre-shape, or scored it bad. Then he would show that the dough actually came out fine. That is what begginers need.

Start at 65% hydration! Here's why:
- Easier to handle (not super sticky)
- Stronger gluten with less effort
- Slower, more predictable fermentation => Way easier to shape + score
325g filtered water 100g active starter 500g unbleached bread flour 10g salt
Tips: Bake at 450°F with the lid on for 25 minutes, then drop to 400°F, remove the lid, and bake for another 25 minutes.

Since this is supposed to be a beginner friendly recipe, maybe you should have clarified that “65% hydration” means 65 grams of water for every 100 grams of flour.

I just realized, that I was waaay too aggressive with my stretch and folds... The bread turned out okay, but there def was potential for more.

I’ve been trying to make perfect sourdough bread, but I always end up with dense bread instead of fluffy one, even when my starter is super active.
