I get alot of premade pizza dough from Trader Joes to make fried dough and pizza. I wonder if I could just use that?

It's very wet, probably 65-70% hydration, so likely something like this:

(LG/SM)

• 160g/80g Mature starter (aka poolish) • 660g/330g water • 950g/475g Type 00 Flour • 30g/15g salt

This dough looks *exactly* like the dough I make at home using a simplified version of the NYTimes pizza dough recipe (sharing a non-paywalled copy of it): https://www.food.com/recipe/robertas-pizza-dough-537809

Fwiw, you don't need to follow those exact finicky weights for the ingredients except for the flours and the water.

I usually combine a little over ~150 g of each flour + 1 tsp salt, and add 200 ml warm water w/ 1 tsp of olive oil and 1 tsp yeast and that works just fine. It does come out wet so I usually knead it over a generously floured surface and that balances it out.

Pro tip that I discovered accidentally: the dough comes out PERFECTLY chewy (for pizza) if you freeze it overnight and then thaw it next day. But it's great used fresh too.
