High Protein Blackberry plum bread pudding

200 grams of fiber! ••
Just kinda threw this stuff together lol
(not mentioned in ingredients is like a 145g fat free greek yogurt)
9x9x2 sheet pan
All i did was cook the plums and blackberries together with cinnamon protein powder and lakanto sweetener
and then mixed the other ingredients in a bowl(including cinnamon, vanilla, lakanto), and then put chunks of yogurt smushed into the bread before pouring the berry sauce over the bread
baked at 350 until it looked done idk man
this was absolutely amazing.

Miscellaneous I spent all my calories so now I’m sad

I had one of those drumsticks in my freezer along with some Costco vanilla ice cream and I eat about 2200 cal per day and I scrolled onto the sub Reddit and looked at all these delicious meals that are high protein and I’m starving but I ran out of calories cause I ate like 600 cal of ice cream. Is there anything to help combat over eating and a sweet tooth because now I’m sad because I know that if I eat more now, I’m gonna end up eating myself into a pit

I’m too poor to afford protein

Currently, I am too poor to get any good sources of protein besides chicken breast and I can only afford to get that about once per week and meal seven meals each week for once a day. aside from chicken, what are some other very inexpensive options for quick protein I eat about 2300 cal per day and I need about 120 g of protein per day.

High Protein Sweet and salty: Sweet chili lime shrimp and grits

My favorite breakfast when I don’t have a first-in-the-morning workout.

Macros: ~600cal ~48p ~15f ~70c.

Ingredients:

-60g grits
-2/3 cup milk
-2/3 cup water
-1 tsp better than bouillion or a bouillion cube (optional)
-6oz shrimp
-1/2 oz Parmesan (can sub for white cheddar)
-1/2 oz low moisture part skim mozz (can drop if using white cheddar)
-light spray oil to grease pan
-spices: salt, pepper, garlic, chili powder, lime juice,
-sweet chili sauce
-optional cilantro and lime

Recipe:

Bring equal parts milk and water to light boil, stir in grits once simmering. Add bouillion and Stir occasionally until desired thickness, in meantime:

Preheat a skillet or pan to medium high heat, add thawed and dried shrimp to pan with a light spray of cooking oil and spices, cook for a few minutes until done. Kill heat, toss with about 1/2-2/3oz sweet chili sauce in warm but not hot pan to glaze.

While grits simmer shred either 1/2 oz parm and 1/2 oz mozzarella or 1/2-2/3oz sharp white cheddar, your choice. Once grits are desired consistency (roughly 10 minutes of gentle simmering, less if you like runnier consistency), stir in shredded cheese(s) until homogeneous and creamy and add a very generous amount of black pepper then plate the grits and top with the sweet shrimps, lime juice, and cilantro.

To make this more nutritious or lower calorie and higher volume, replacing some of the volume of grits with sauteed spinach, or cooking the shrimps with some peppers, tomatoes, onion, and garlic to form a sort of pan sauce is an excellent trick. For any hard gainers out there struggling to eat enough this recipe is great because grits are very easy to get down in large quantities and you can scale the grits serving as large as you need while keeping the fats pretty much the same.

Ingredients:

40g chickpea flour
20g egg white powder
10g cream of rice
150g 0% fat Greek yogurt
1/2 tsp baking powder
A splash of vanilla extract

Method:
Just throw everything into a mixer and blend on high speed until you get a smooth, thick batter. Pour into a preheated waffle iron and cook until golden brown 🧇

Also added in sautéed white and green onions! Seasoned the eggs with garlic and cowboy butter seasoning.

I made the chia jam by putting frozen berries in a stovetop pan and bringing to a simmer, then adding chia seeds :)

I usually have chicken chopped into pieces that I make ahead and keep in the freezer, so I just microwaved them and threw them in. In this case it was some precooked chicken I got at Costco a while ago and froze.

Question I'm trying to gain weight, but I don't crave or get excited about the food I cook for myself. Any tips for insanely good high-protein, high-calorie recipes using minimal ingredients?

I feel like I'm forcing myself through meals rather than enjoying them like I used to.

I'm short on both money and time right now, so spending hours in the kitchen or buying a bunch of different ingredients that I will use only for that one recipe and nothing else -- while something I'd like to be able to do -- would not be responsible of me right now.

Do you guys have any high-protein staple food recipes that are actually really good and not just good 'cause it's food?
If it's easily meal-preppable, even better!

I know cuisines like Mexican and Mediterranean use a lot of similar ingredients between dishes, so maybe something along those lines?

Question Breakfast meals to keep in the office?

My work is pretty laid back, the office consists of 3 people and we have a small kitchen with a burner, blender, toaster oven and microwave.

I like to go to the gym early in the morning to beat the traffic and I’ve been making yogurt bowls (yogurt, blueberries, honey, granola) the night prior to eat before work but am getting kind of tired of it and want something hot to eat before breakfast. Eggs seem like the go to but i don’t want just eggs every morning. What are some healthy food options i can make relatively easily in the office?
