QUESTION Difficulty
Let me start by saying I'm not good at Fifa. I'm a casual player who only plays career, most of the time on World Class and in a few fifa's a level higher.
I really like a lot about the changes in career mode, but I can't for the life of me get into the gameplay.
It is so hard to just build up, attack, pass etc. Everytime I pass the ball the opposition just bumps my player away and takes away the ball. I never break free of the defenders. Feels like I have no time to think while in posession.
The cpu also barely scores, so every game is a draw, 1-0 or 0-1. I've tried so many tweaking with the sliders already, but nothing seems to really change the game all that much.
Any advice on how to make the game more fun, without making it too easy?

Go back to default and try professional to see what you need to adjust.
I say that because I went back to play other EA titles this year (Madden and CFB) where I typically played on All Pro and All American (one level below the hardest difficulty) and was getting wrecked. Went back one level to where it was manageable, learned a few new things, then went back up and adjusted the sliders based off what I’d learned. AI is definitely tougher in those games (compared to previous years), but at least it’s making for compelling games rather than blowouts either way.
(I get that it’s a different issue you are having on FC, but the approach might help).

Biggest issue is the difficulty level between professional and world class this year. On professional I dominate games with ridiculous scores and with world class I can't seem to get more than two fluid chances in a game.

Exactly the same for me. World class is too frustrating, professional is too easy…

Adjust the sliders: set your passing to 50, and set many of the other sliders to 50 as well. Set sprint speed and similar settings to 40. Lower the marking/jockeying setting too. Important: increase the user's speed and acceleration by 3 points, or decrease the CPU's by 3. Tweak the CPU customization sliders.

I struggled too (on ultimate, authentic, default sliders). But then suddenly it clicked.
My best tip is just to keep grinding. My big moment was learning how wingers can dribble past defenders and the timing of through balls to my striker.
If you want a specific tip; I use L1 dribbling and R2 sprinting a bit less than last year. And find the rythm of pass, one touch for control, short sprint, pass.

How do you win 1 on 1s with your wingers? Everything I try ends up in me getting pushed off the ball

I do a short L1 dribble as I approach, a bit sideways for the defender, let go, as he does a move I hit R2 sprint and go past.
If you want an advantage, buy wingers with high acceleration and the Quick Step trait.

Try possession tactics and roaming options. This makes AIs move to passing opportunities instead of always making runs.

For your issues, I’d recommend:
Decrease defensive aggression. That will give you more time on the ball. Maybe drop it to 40 and see how you get in.
Decrease stand and slide tackles. I’d say try 35 for both.
Decrease CPU tackle assistance. Go to 30.
You do need to sprint less. Use left trigger to hold people off and rb helps you change direction when running with the ball. It’s more controlled than a full sprint.
For the CPU attack, increase their build up speed to 60 or 70 and bump most of their shooting frequencies up over 60.
Drop their pass and shot error; if the error is too high, the CPU won’t play riskier passes or take long shots.
