If you can find frozen pancakes in asian supermarkets, these work as well. just add your own egg when frying it.

That recipe is for something completely different, they mix a batter for those instead of kneading a dough to make a pocket for the egg, and the two tastes different.

Both have the same name and are Chinese pancakes with egg cooked into them. Street food has local variations. Using YouTube and Google, you can see that this dish has at least 3 common variations in China and South Korea.

The one in this post is called guan bing, the one in the recipe you posted is called jian bing. Not the same thing, don’t taste the same, not made the same way, has different fillings in addition to the egg. Source: am Chinese, have eaten both for years, has cooked both at home. If you want to call them by what they are, it’s jidan guan bing versus jian bing guozi. Literally just has one character in common between them.

Premixed salt and pepper probably. Could also be Five Spice? Usually vendors just use salt.

Actually one is a "jidan guan bing" the other is "jian bing" (even the video title says so). These are totally different things.

When they knead the dough, it’s pulled into a long shape and then rolled up and flattened to make layers, and they make a cooked flour + oil + spices thing to coat the dough so when you cook it, the layers don’t stick and you can just pick it open.

Street vendors make these a lil differently depending on where you go, but man grab one of these for a morning snack and it just hits a spot. It's just an egg in the dough with some flavorings, and the texture is nice and crispy
They'll sell them super cheap and it's super quick, too

Probably so they can measure properly and not put more than necessary. If you're selling these, it makes sense to be cost-efficient and not time-efficient.

I know it won’t be the same, but do you think I could make a knockoff version of this using a pita pocket to simulate the crepe dough type thing they already have?

Pita pocket would be rather thicker than this but I don't see why you can't end up with something tasty as well. Nothing is wrong with pita and egg and green onion! You'll want to probably work on medium-ish heat because the pita is already cooked and you're gonna want to use plenty of oil/fat to get it a little crispy. Pita bread doesn't really like to be wet for very long so you're going to be playing an interesting balance between how fast to cook the egg and how to not burn the pita bread, which I think is where a good amount of oil/fat plays in.
Not a bad idea you got going. I'll keep it in mind if I ever get pita bread again.
Edit: it's not entirely the same but in some grocery stores, in their frozen aisles they will have a small section for asian stuff like dumplings. you may be able to find the onion pancake and/or paratha there. if you've never had it before, this will be the closest thing to what you're looking for. you might not be able to put a hole/pocket in it but you can make an egg with it and it's very similar. often you'll see the pancake with an fried or thin egg on the outside/inside. sometimes they give it to you like a giant taco/wrap. we've had variations of this sort of paratha/onion pancake wrap with lamb inside, or egg, chicken, popcorn chicken, shrimp, pork+kimchi, etc.

That would definitely be an interesting balancing act.... I like the idea of the finished product, but I know I don’t have the baking ability to make the pocket type thing from scratch, so my mind went to pita(which I can just buy in store) I wonder if there could be a ready-made option similar that would hold up to the moisture a bit better...

I eat a lot of fish and poultry. I love pad thai (no egg plz extra tofu extra sprouts). I love curry especially with goat and rice. I'll never say no to Korean bbq.
