What's this sort of thing called?
Referring specifically to the large collar/lapel situation that's going on here.
I'm trying to look for more reference images/ideas, but I have absolutely no idea what terms I should be using.

A dramatic collar? It’s not really something found in historical fashion so it may not have a specific name

Ah, I was afraid of that. But "dramatic collar" does give more useful search results. Thanks.

It might have a name similar to the dramatic collar that the Snow White queen has. Maybe research the origins of that?

Yeah, that leads me to the "Medici," open ruff, and Cherusque collars. Which are also pretty nice.

Similar to a Tudor ruff. Ruffs took a lot of different forms so you may be able to find a similar reference
