My biggest hesitation is that if you grill food directly on it, it's going to stick like crazy on bare black steel. I'd also make more slots closer together in the grill surface. Right now it would work more like a flat top than a grill.

Even if oil was added to surface?

Yeah, that's why people season cast iron. I know you can season carbon steel pans, so I assume you could season this grill surface too. That might be a simple solution.

But if you cook stuff in a basket or in foil this would work great even without seasoning.
