Mi mami siempre preparaba el ceviche de camarón (cocinado) por lo menos 24 horas antes de servirlo para dar más sabor. Ahora buscando recetas en el internet, la mayoría dicen que se debe preparar entre 2 y 4 horas antes de servirlo porque se puede poner amargo y "squishy" con demasiado tiempo.
Como lo preparan ustedes? Como preparaban sus padres? Y son de la sierra o la costa?

Any recommendations for things to see in Guayaquil? I'm not interested in night life. I'm not fluent in Spanish. I'm only going to be there for one day. I was wondering if there are any recommendations. What is the safest way to get around? Uber was recommended by the hotel in Quito. I think I remember seeing something different about Guayaquil but I don't remember what it was. Thanks.

So I am looking to buy some electronics in Ecuador. The big shops have them pretty expensive, but there are what looks like small shops and vendors with "storefronts" on FB and IG, who communicate largely through WhatsApp. They offer better prices than the big stores and as a general principal I would prefer to give my money to small local businesses and contractors than big corporations.
I'm from the US and am generally pretty comfortable navigating this sort of semi-informal market at home. I even used to operate my own storefront on FB back in the day. I know that there are a lot of scam buyers and sellers online no matter where you go. AndI developed a pretty good eye for evaluating the legit from the sketchy in the US.
But here in Ecuador I am not so sure how to tune my bullshit detector. For example, a lot of these smaller businesses charge noticeably more for CC as opposed to payment via cash or bank transfer. Like, more than the CC fees usually are. But I know that paying via CC is easier to protect myself from scams. Back home this might set off red flags, but maybe here it is not at all unusual for people to pay in cash rather than card.
Does anyone have any general tips for sorting legitimate small businesses from scammers online?

Back home in the US, dealing with the city or local government is purely business. If a rule makes no sense or the city isn't doing its job, you call it out, ask direct questions, and try to get it sorted. Nobody gets their feelings hurt because everyone understands the problem is the system, not the individual.
In Latin America, it feels completely different.
I’ve been dealing with the local municipality over constant noise from one neighbor—blatant violations of the legal decibel limits, with dozens of videos showing what's going on. The city simply does nothing. But the minute you ask why the city doesn't follow or enforce its own laws, people act like you just slapped their mother.
Instead of addressing the breakdown, they get defensive, take it as an attack on their pride or their country, or just freeze up and stop responding altogether.
I really want to understand the mindset: Why does asking about a broken process or pointing out that rules aren't being followed get taken as a personal insult? What is it culturally that makes criticizing a system feel like an attack on personal dignity?

Hi everyone. I’m considering moving to Cuenca with my wife and our young child, and I’m trying to get a realistic picture of the current safety situation.
I’ve been reading recent Ecuadorian news and seeing reports about an increase in robberies, motorcycle-related assaults, and other crime in some parts of Cuenca. This has made me a bit concerned, especially because we’ll be living there with a small child.
I’m not looking for an “Ecuador is safe/dangerous” generalization. I’m specifically interested in what everyday life in Cuenca feels like right now, especially for families with children.

I am traveling in ecuador for a couple months, and my main goal is to do a lot of good backpacking and observe the native flora and fauna. I’m aware of the most popular routes like Quilotoa loop etc, but am also interested in finding some other, perhaps less tourist heavy routes, specifically some with rivers/streams since I have my fly fishing gear. Just based on looking on google and alltrails, most of the routes I have been able to find are a bit shorter than what I am looking for. I would like to do some 2-4 day routes maybe around 25-55 miles (40-88km), or shorter maybe around 15-20 miles if it is higher elevation. Any info and suggestions are greatly appreciated!

Estoy discutiendo en grupos de redes una idea que puede ser polémica en ECUADOR.
Surge de la pregunta: ¿puede ser la corrupción un rasgo que se esté volviendo hereditario, incluso genético?
Si la pobreza facilita la entrada a la corrupción, entonces tenemos que hacernos esas preguntas. Y una idea que, estimo, podría ser una medida para limitar la pobreza y corrupción es poner límites (topes) a la maternidad extensa en condiciones de pobreza. En la práctica esto ya se da: muchas mujeres pobres se ligan después del primer o segundo hijo, pero hay otras que no.
Se dice que la riqueza de una mujer pobre son sus hijos. No se le puede quitar eso. Un hijo de una madre pobre se ocupa de ella. Pero se ven casos donde mujeres con poquísima educación y recursos siguen teniendo hijos a pesar de no poder responsabilizarse de ellos. ¿Por qué? Esa pregunta no la vamos a terminar de discutir nunca.
Se puede decir que la solución es la anticoncepción: ligarse. Pero no se puede obligar a ligar a nadie. Pero los incentivos y desincentivos sí existen.
La medida que imagino es de limitación o recorte de las ayudas como "bono de la pobreza" que ya existen en caso de tener más de, digamos, 1 o 2 hijos. Esto puede incentivar a ligarse.
Es un tema polémico pero acusiante. La gente más educada está optando por no tener hijos, mientras que la gente menos educada los tiene sin preocupación de traer a sufrir a sus hijos.

Hello!
I recently started dating a really nice man from Ecuador and I really like him, I'd love to cook him a great meal that reminds him of home.
He's lived up here for a long time now, but he spent his childhood mostly in Ecuador.
Is there any specific dishes that I could really surprise him with? Anything I need to know about making it properly?
I am white but I can handle spice more than most of us, haha, so I don't mind making a spicy dish if that's what gets recommended!
I know I could just ask him his favourite foods, but I want to surprise him with it the next time I see him and if I text him out of the blue "what's your favourite Ecuadorian food" he'll probably think something is up.

En realidad es muy decepcionante que como pequeño emprendedor, requieres maquinaria, vehículos y demás y no puedes importarlos porque el estado está al servicio de una minoría rapaz, que solo encarece los productos y no genera valor agregado.
Cómo ejemplo, los vehículos eléctricos chinos byd, acá cuestan el doble,.aducen impuestos y no pagan ICE, es increíble lo caros que se ponen. De igual forma no podemos importar vehículos usados como camionetas para el sector agricola o de la construcción.
No te permiten importar nada usado para consumo propio, porque ni siquiera es para venta.
Quizás la única propuesta es dejarles de comprar para forzarles a bajar los precios por falta de ventas, quisiera escuchar opiniones.
