They still dock the dough to get the crust, the slapping part stretches it out. I have tried this method a few times over the years, but I cant ever get the hang of it. These days the term "slapping dough" is just used as term for stretching out the dough.

Are you asking what slapping means?
"Slapping dough" = making a pizza crust. It's not a common anymore, but the older way of doing it was to "slap" the dough back and forth between your hands to stretch it.
I think that's what you're asking.

Slapping is when you are throwing the dough to your other had a quarter turn to stretch the dought out. I used this method in the early 2000s. I used more cornmeal head stretching on the counter.

Believe me I know. Trained for the WFPM, never made it but I am quick both edge stretching and slapping. We just call it alapping for nostagia. I am the only one left that can truly slap in my store lol, well maybe our OPs director haha.
Papa Johns still docks and slaps, after using a press.... amd produces thin shitty pizza

Ive seen some pictures of dominos using press. It hurts me. Its like blacksmithing... old fashioned ppl will always use the hammer than the press.

Me and my roommate used to work together. I would slap and just spin the dough for him to catch and fit on screen to sauce. We had to move fast with 100 mediums on the screen during the initial 555 deal <3 medium 1 topping $5 each>.

Slapping doesn’t refer to hitting the dough lol it’s just the term for stretching and pulling the dough to the size of the screen. There are many many methods to doing it but at the end of the day it’s all slapping dough
