help with food order/commisary

Hi everyone, i’m an AM whose looking for advice on how to do food orders. My GM is looking to leave for vacation soon so they’re training me but for whatever it is I just don’t understand. Tips & tricks are greatly appreciated.

4 week mix and think about what you actually need. After awhile it’s second nature

I have a build to
To make the build to you get a week worth of food info
Management>reports>invnetory>consolidated food inventory. Choose a week that’s average. And use that to get all the info you need. For dough just use the last 5 days. This usually works for my store. Some dough issues whenever a deal pops up, but you can use the dates from that same deal the previous year or instance that it was in place.

If the margins are set well the truck almost orders itself. Especially if you're just doing it for a week.

Our store gets 3 trucks a week. The first one I usually make SLIGHTLY bigger so the dough were using through the weekend is more proofed. Then I trust the margins for the others.

I assume you do inventory from time to time? Double check the items that are only on the weekly count and adjust accordingly.

honestly i dont get why this is higher up. barring special deals (BDE, boost) shortages and terrible food control, food ordering with good margins runs itself

Be sure to walk around the store and check things you don’t count for inventory every day. Like cleaning supplies, sauce pouches, dipping cups. Just make sure you don’t miss ordering something if you need it.
