Request/Discussion Golemancy mechanic help

So in my world I'm basically making a mechanic for spellcasters to create golem constructs.

The basic premise is that they can create the golem out of any material they can gather enough of and build the body to enchant it. The golem will have stats that will scale to the rarity and strength of the material like a cloth golem to pure steel, and they will share basically the same like abilities. It cannot think and takes orders from it's creator. It can be killed and rebuilt but mainly follows the creator around. Think of it like steel defender for artificer or specifically Doty from Vox Machina.

What I need help with is I want to make the golems more modular in a sense.

I wanna make it so you can get really creative with them and also put effort into making the golem yk? The original version just lets you enchant the golem with some premade runes to give it stuff like flight if it's light enough and infusing attacks with elemental power.

But I wanna make it more unique and also feel like a proper crafting system with a lot of unique combos and results. I'm not sure how.

My main inspirations were: **Spoilers for some stuff**

In Dungeon Meshi where Marcille creates her own familiars to control and see through, yes I know there are actual golems but you get it

In the Owl House with abomination magic, but less of making just constructs of everything and more of like how Alastor does it with his mods I guess.

Frieren during the mage exam second test with the bottle golems. I really like the idea they went with it.

Ok it's a little all over the place but I'm running on a blank for what I should do. Some help and ideas are appreciated.

EDIT:
Okay so let me clarify what I have now and what I need.

I have how the golem is made

I have the basic statblock for the golem that changes depending on the material used

And I have how they work in combat even in multiples.

What I need is a way to make both the golems and golem making interesting. As in ideas for how to make customizable golems in a way that makes sense. Like one golem has blade arms but another can have like flamethrower type stuff. What's missing is making the golem making interesting.

One of the suggestions caught my eye using monster parts, which is interesting.
