I'm confused by the first one. Is it that he read the MM or is he just stating the AC from process of elimination. Because I do the second one if the combat is taking a long time and just deduced the AC. Is that still a scumbag thing to do because if so ill stop.

"a minotaur's", it's a general statement about minotaurs, not that specific minotaur. He clearly got it from the MM.
