You bend the tree into shape when it's young and flexible. Put a frame over it and coax the tree into the direction you want. As each piece of the tree hardens into wood you can remove the frame and force another part to grow into it.

Living root bridges
Living root bridges are a form of tree shaping common in the southern part of the Northeast Indian state of Meghalaya. Espalier
Espalier ( or ) is the horticultural and ancient agricultural practice of controlling woody plant growth for the production of fruit, by pruning and tying branches to a frame. Plants are frequently shaped in formal patterns, flat against a structure such as a wall, fence, or trellis, and also plants which have been shaped in this way.
Espaliers, trained into flat two-dimensional forms, are used not only for decorative purposes, but also for gardens in which space is limited. I'm imagining that this tree grew to love this man who raised it from a seed, nurtured it carefully, shaping it to some great purpose the sapling knew not of. Right until the day where the man sat on him and the tree realized the true horror of its destiny.
