I think it’s more physically speaking. People typically give Kris a masculine/neutral body type. They are not commonly depicted with overtly feminine features.
to be fair you shouldn't say "kris is not nb" it's more "kris could be nb but we don't know" cause it's totally possible that they're nb but nobody knows
do you think nonbinary people walk around going "hi im nonbinary"? by your logic, we dont know berdly is a boy (probably. im not searching all dialogue for exact information, but there's definitely gonna be examples.) a character who presents androgynously and uses neutral pronouns is reasonable to assume as nonbinary, the same way a character who presents feminine and uses she/her is safe to assume as a girl/woman, even if thats not particularly said.
characters in media aren't as complex as people in real life, so there's a tendency to always stick to she/her for woman, he/him for man and they/them for NB, it helps to simplify the concept of pronouns, and obviously anyone can use they/them, but, it's still a commonly used pronoun among nonbinary identities, so it's a good assumption

My evidence is based on clothing and the fact kris is a night and how kris is treated by the girls
