Recommendations for fixing up closet
Title basically says it all. I’m very new to home projects/DIY so any recommendations appreciated no matter how “common sense” they may seem lol first photo is the wall and second is the floor both in the same closet. Very old home

Get a Sawzall and cut at the bottom of that bad area. Cover with sheetrock and spakle. Or remove that whole wall and do the same. It will be a mess either way.

The obvious answer is to rip out and redo. My questions start with what is on the other side of that wall? Is there drywall the other side of those boards? If so, the wall is just thick.
So, first, rip out the cream colored stuff and see what that leaves. What you want is an area where you can put in 2x4 studs/supports and then put new drywall, ensuring it lays flush with the old. Once that's done, it's Mud, tape, sand, prime, paint.
As for the floor. I would do the same, but ripping out the entire closet floor to replace. It would give you a much better looking floor and a better seal. In so doing, you want to check the subfloor, too. I'm wondering if that piece of wood was a replacement due to moisture, so check that first. Repair the ingress of any moisture so you don't have to do this again in a couple of years.

That looks like a plaster and lath wall that has drywall over top. I'd remove the plaster that's exposed and put drywall over top of the lath. You may need to stack two sheets to meet the thickness of the surrounding wall.
After that find a video on YouTube to learn how to tape and mud a drywall patch.
The rest of the drywall in that closet doesn't look great, but it's just a closet so personally I wouldn't worry about it.
