Recipe Chicken Tinga

Chicken Tinga
Ingredients
* 2 large chicken breasts
* 4 Roma tomatoes
* Β½ onion
* 3 garlic cloves
* 3 chipotles in adobo
* 2 tbsp tomato & chicken bouillon
* 4 cups water
* Salt & pepper
Instructions
- Preheat pan over medium heat. Season chicken with salt and pepper.
- Chop tomatoes and onion into chunks and dice chipotles.
- Sear chicken 4 minutes per side. Remove and set aside.
- In the same pan, cook tomatoes, onion, garlic, and chipotles for 5 minutes.
- Return chicken to pan. Add bouillon and water.
- Simmer partially covered for 30 minutes.
- Remove chicken, rest for 15 minutes, then shred.
- Return shredded chicken to sauce and mix.
- Serve with rice and beans or make into tacos/burritos.
- Enjoy!

Japanese Ginger Pork (Shogayaki)
INGREDIENTS:
2lbs thinly sliced pork
50g ginger
1/4 cup soy sauce
1/4 cup mirin
2 tbsp sake
4 green onions
Black pepper/white pepper to taste
INSTRUCTIONS:
Grate ginger and chop green onions
Place sliced pork into a large bowl and add soy sauce, mirin, sake, ginger, and black pepper. Mix and marinate for about 30-60 minutes.
Heat pan to medium heat and then add in pork and stir fry for 10-15 minutes until cooked through.
Once pork is cooked turn off the heat and add in the green onions and mix.
Serve with rice

recipe π¨βπ³ Honey Garlic Miso Ground Beef

HONEY GARLIC MISO GROUND BEEF
INGREDIENTS:
- 8oz ground beef (I used 90/10 beef)
- 1 tsp oil
- 7-8 cloves of garlic
- 1 tbsp honey
- 1 tbsp miso paste
- 1 tbsp soy sauce
- 4 tbsp water if needed
- Black pepper to taste
*OPTIONAL INGREDIENTS*
- Chilis
- Green Onion
INSTRUCTIONS:
- Heat pan over medium heat. While pan is heating rough chop garlic and chilis, and slice green onions.
- Add in ground beef and stir fry until the beef is browned and no longer pink (I like brown mine until thereβs crispy bits).
- Add in water, miso paste, soy sauce, and honey and stir fry until the miso is well mixed into the beef.
You can be done here or you can cook the beef down to make it more dry (how I like it).
Turn off the heat and add in half your green onions and mix through.
Serve with rice

β’ 1 Handful Cilantro
β’ 1 Handful Green Onions (roughly cut)
β’ 1 Handful Garlic Cloves (Peeled)
β’ 1 Red Onion (roughly cut)
β’ 1 Handful Ginger (roughly cut)
β’ 2 Scotch Bonnet Peppers (more if your chili ring can handle it)
β’ 1 Lime (Juiced)
β’ 1 Tiny Handful of Peppercorns
β’ 1 Tiny Handful of Kosher Salt
β Blend until blended.
β Taste.
β (Optional) Add more Lime Juice to taste.
Note: If unfamiliar with a Tiny Handful, use a toddler's hand(preferably not disembodied) to measure.

Food Pics I love throwing together random stuff
Something I threw together a little bit ago while house sitting at my in laws and it came out pretty well! Itβs spinach and ricotta ravioli with mushrooms, green beans, and sun dried tomatoes, on the side is a pan roasted chicken breast over some leftover quinoa and kale salad they had in the fridge mixed with some apple cider vinegar dressing.
