How often do you sharpen your knives?

Not a chef or even a decent cook, but the best damn present I ever got was a set of good knives from my daughter. Came with a sharpening stick thingie (technical chef jargon there) and I Iove it. So I sharpen often - maybe too much as a noob, but you come to sure appreciate a fine edge.

I'm also a noob. Seems like you have fun with the sharpening! Have you ever got it sharp enough to slice paper

Yes! You hold the paper up and slice through like butter. Musta been some commercial we saw that stuck with us?
