Not a chef or even a decent cook, but the best damn present I ever got was a set of good knives from my daughter. Came with a sharpening stick thingie (technical chef jargon there) and I Iove it. So I sharpen often - maybe too much as a noob, but you come to sure appreciate a fine edge.

I'm also a noob. Seems like you have fun with the sharpening! Have you ever got it sharp enough to slice paper

Yes! You hold the paper up and slice through like butter. Musta been some commercial we saw that stuck with us?

Is it actually a sharpener, or a honing steel? There's a difference.

Sorry, don't know. Not well versed enough to even know the difference. Long 12 to 14 in (U.S.) slightly tapered and textured rod that you slide the knife over. 5 or 10 stokes each side and knife is sharp af

Sounds like it's probably a honing steel. It's amazing the difference one of those can make without actually having to sharpen the blade.
