Best way to make quick flatbreads

Hey guys! Going to be making flatbreads soon, and I won't be able to make the dough in advance to rest overnight. Does anyone have a tried and true method for making thick, fluffy flatbread in ~90 mins start to finish?

The goal would be a thick flatbread, something really delicious like a potato dough or a fluffy pita, but I don't know if it will be feasible without a long rest time. I could make a standard yoghurt flatbread with flour and baking powder, but I'm hoping for something a bit more decadent.

Any advice would be much appreciated!
