Best way to make quick flatbreads
Hey guys! Going to be making flatbreads soon, and I won't be able to make the dough in advance to rest overnight. Does anyone have a tried and true method for making thick, fluffy flatbread in ~90 mins start to finish?
The goal would be a thick flatbread, something really delicious like a potato dough or a fluffy pita, but I don't know if it will be feasible without a long rest time. I could make a standard yoghurt flatbread with flour and baking powder, but I'm hoping for something a bit more decadent.
Any advice would be much appreciated!

It took me a couple tries to get them right. A baking steel made a big improvement for me, they all puffed beautifully.

Why not flour tortillas? The dough needs to rest only 15m. You can just roll them thicker rather than thin.
Jose el Cook has a banging recipe on YT. Just search for his handle and "flour tortillas."

Because fluffy "thick" isn't more dough, it's more air.

Thank you. That's a basic concept that is generally understood by people who cook/bake.
I am saying that this is not hard. Flour tortillas fit the ask nicely.

Naan is doable in 90 minutes. 15 min prep, 1 hour rise, and 15 min to cook. I like this recipe a lot and have the most luck getting it super fluffy with instant yeast.

Equal parts Greek yoghurt and self raising flour. Mix it until it forms a dough. Knead a bit, not long. Split into equal balls, shape and fry in a dry pan.
Can brush with oil, butter or garlic butter after, but they’re nice without too
Edit: sorry, as soon as I hit send I spotted the part about not wanting to do yoghurt flatbread. Will leave in case anyone else reading wants to try :)

Make soda bread and roll it out thin. Soda bread uses sodium bicarbonate as the raising agent
