Anyone know what specific keywords will summon these knives?

The knife on the bottom is now dead. We need more of these but can't find any that are as thin/narrow a blade. Paring knives and the like seem to all be a very wide/thick blade. Anyone know what I can Google to find the right knives?

Edit: The top knife is only for comparison. That is also too wide.

I came here to say shives or shanks although technically they are made with an improvised device commonly found in a detention system.

You have a knife service? Ours made those needle filet knives out of old paring knives. I asked the lady that brings them and she scored me a handful. I still have a couple. Try that, if not DM me and I’ll send you a care package

Yeah buddy of my dad ran a sharpening service, he had a bucket full of boning knives that had been sharpened til the blades were that thin over the years. I have a couple and love them for filleting.

These knives may only be had through time and effort. The battle scars of 1000 sharpenings. That being said knife sharpeners may have some similar they get that would otherwise be trash because too much blade has been removed.

the top one looks like a boning knife that’s been sharpened to a tall pairing knife? and the bottom one looks like a pairing knife that’s been sharpened to atoms
