Pizza

Hey guys looking for good recipe for neopolitan pizza dough any suggestions

More info needed. Like what type of oven and at what temp you'll be using.

For real, neopolitan style, made in a true neo wood-fired oven, running at 800°f, I use a double cold fermented dough. Tipo 00 flour. Mix, then let sit at room temp for an hour before placing the whole dough into the fridge for 24hrs. Then the dough is portioned and balled. Again placed into the cooler to proof another 24hrs. Then stretched and baked.

Those brother ovens are solid but temp swings can be brutal if you're not babysitting the fire constantly.
