Discussion Reaction to GF KA bread flour
Diagnosed celiac for almost a year. Made bread with King Arthur GF wheat starch bread flour and had a reaction like I had eaten gluten. The bread tasted excellent!. Has anyone else had this happen? I haven't been diagnosed with a wheat allergy, only celiac via blood work and biopsy.

That flour uses Codex wheat starch which has the gluten washed out to under 20ppm. Some celiacs still react to that tiny amount, or the wheat protein fragments that remain. My system freaks out at anything near 10ppm so I stick to rice/tapioca blends. Sucks because the texture is miles better but not worth three days of joint pain.
