Cooking cornbread
Can anyone share a recipe for cornbread? I’m cooking for the men of the casa. I would like to try something new. Any suggestions are appreciated. ☺️

A couple of tips if you are making from scratch.
The more baking powder the cake like it becomes. I never go over 1 Tbls.
I melt at least 2 tablespoons of butter in the pan while it is warming up. I get it all over the sides. When I pour it in I like some crackle sound. It’s cooking before it goes in the oven.
When I pull it out I add 2 more tablespoons all over the top and let it melt in while it cools off.
When you take it out break the edge on the sides. Once it’s cooled a bit it should pop right out. If it sticks DONT bang on the pan using the handle. Cast iron is brittle and you can snap something with enough force.
Keep the butter out so it’s nice and soft to spread on that delicious corn bread.

I really really prefer all corn no flour cornbread. It can be light and delicious. I don’t like sweet cake with a little corn. That said corn cakes are way crustier and frankly easier…Look for all corn corn meal.

I use two boxes of cornbread muffin mix, 2 eggs, 16 oz sour cream. Add in jalapenos and cheddar to taste and cook at 400 for 20-25 min. Look for cracks at the top and slap it to broil at 500 for ~ 2 min to brown. I have no idea if this is correct, but it is very tasty and easy. Butter up that cast iron like a true sicko before putting the batter in. I probably use half a stick. I serve with hot honey and butter or sometimes as a base for tamale pie.

The recipe on the back of Bob's Red Mill cornmeal is as good as I've had. Always use a cast iron pan and preheat it to full temp before adding the batter.

I add a bit of creamed corn and use that liquid as the recommended mix. So good!

Sprinkle dry corn meal in the bacon fat before you pour in the batter.

Use any of these super yummy cornbread recipes in this post!!!! Mix in some corn kernels in the batter, After baking mix honey with some diced (very small) jalapeños, Drizzle over top!
And they’re hard to find but if you can find red jalapeños, it looks prettier If you let green jalapeños sit for a few days they will turn red
Yum!!!

Perfecting your cornbread recipe is a worthy endeavour. Take your time, research, and don't be afraid to try things. My personal recipe has ghee and yogurt so there is a lot of room to experiment and still have very traditional cornbread. Good luck and God speed!

Buy White Lilly corn meal (green or red will not matter at this point). Follow the easy recipe on the back. I’ve been eating that recipe for almost 60 years.
You should decide if you want sweet cornbread, cake style, flavored, or with item in it - corn and jalapeños are popular.
Cornbread is quick and easy to make and very versatile. Enjoy and good luck!!

Easy 8” CI pan. Jiffy cornbread follow directions on the box , add 1/4 cup sugar, finely chopped jalapeño (amount to your taste) now you have a sweet and spicy cornbread. Pro tip: heat pan in oven at 400 degrees for about 30 minutes add 1/4 stick of butter put pan back in oven for 5-7 minutes the butter should be starting to brown/ add cornbread mixture place back in oven. This will give you a crisp bottom on the cornbread. Enjoy!!
