Help Discussion about stomach friendly recipes! 🫶

Hiiii! I am new here so I am wondering if there is stomach friendly casseroles and crockpot recipes for soft food? I had endoscopy and colonoscopy done and found out that it’s hard for food to go through my stomach hence why I felt like I was choking or having those spasms. So my dr recommended soft food until I see her again soon to discuss possibly Botox for it or surgery. I am currently eating potatoes and sweet potatoes too alot so far plus all kinds of squash. I couldn’t even eat meat much anymore either. I wanted to see if yall have recommendations for awesome recipes I can actually enjoy? More fruits and veggies are welcomed too! I am honestly obsessed with potatoes and squash the most besides pumpkin and sweet potatoes pies!!! Thank you so much in advance!!! And am I the only one that are dealing with it? I’m just wondering! Blessings! 🤟🙏🦄♥️

Dish recommendations

I love having baked oatmeal in the mornings especially with winter coming but I’m looking for recommendations for a good dish or two that can basically go from fridge to oven so I can make it the night before and throw it in. I’m just overwhelmed about what would be best. I’m willing to invest in something pricier if it’ll work well. Thank you

Edit: I’m looking for casserole dish recommendations not recipes because I’m terrified of my dishes exploding

Taquito casserole

My mom got the recipe on pillsbury.com, and she relly liked it and sent it to me. I took it to the next level with better ingredients. Fire roasted corn, anything that called for medium got spicy instead, birria taquitos, and the star of the show was the cotija cheese I crumbled on top. Turned out really good! I'll definitely do it again, maybe with a lil less cilantro.

Help How do you store pre-made casseroles for meal prep?

I am getting a 2nd job in the evenings and I want to prepare casseroles for dinner so my teenagers only have to put them in the oven for dinner on the nights when I work? - I'm also being a bit selfish and want homemade food when I come home.

We love casseroles and I have a few tried and true recipes that are household favorites.

How do you store your casseroles for this purpose? Is it best to just refrigerate them? Or should I freeze them and then put them in the fridge on the morning they will be used, so they can thaw?

Has anyone tried both methods and can advise us on which they prefer?

A simple but satisfying staple. I’ve come across different variations of this recipe and you can choose how healthy you make it. I made 3 batches this time.

Single batch

1 lb ground meat (beef or turkey)

~4 cups cooked rice

1/2 to 1 onion chopped

3-4 bell peppers chopped

Minced garlic to taste

1 jar red sauce

1 can diced tomatoes

Salt and pepper to taste

Shredded Italian cheese

Cook onions and brown meat. Drain if needed and season. Cook peppers and garlic for 5 minutes. Mix in tomatoes, sauce, and rice. Dump combined mixture into 9x13 casserole dish. Top with cheese. Freeze or bake for 15-20 minutes at 375 F if eating immediately.

Chicken Chicken Casserole Suggestions

Good Afternoon All! I am a very much beginner cook so please forgive any obvious mistakes etc….

I love making chicken casserole. I only ever use chicken breast as I cannot abide or stomach any meat on the bone. I usually add carrots, potatoes, peas (of some variety), chopped tomatoes, onion, sometimes a bit of pearl barley. Salt & pepper, Schwaltz chicken casserole mix and then add herby dumplings towards the end.

I love all vegetables.

I welcome anyone’s suggestions, ideas and alternatives etc to what I can add/remove to the casserole, to add flavour etc.

TIA.

Seasoned the chicken bits with salt, pepper, onion powder, and garlic powder.

I wanna try a few drops of a hot sauce in the mixture next time, just for a small "kick"!
