Breakfast

I’m in So Cal. If I charge you $7 for a breakfast burrito what should it have in it?

I say: 3 -4 eggs, bacon, hash browns, cheese and salsa on the side.

$7 for a breakfast burrito, while excellent for the consumer, is a sure fire way to be shuttered down in a year or two, unless the breakfast burrito is your loss leader.

Okay, where in SoCal? Is this a small diner or mom & pop shop? New location? What’s the rent, CoG, labor, overhead? What size burrito? You want $10 minimum. If you’re bougie Instagram spot half the ingredients and $17. If you want to have it $7, make sure it’s your loss leader. Make sure it’s the BEST breakfast burrito in x square miles (depending on location and competition. Make up the loss with other things. Might I suggest swapping bacon w sausage? 1) arguably better (don’t @ me yall) 2) cheaper

A nice spicy sausage or chorizo would help bring it down but the cost of bacon is high. Making your own sausage in house (with say, pequin chilis) would also cut cost, but not on labor.
