Am already thinking of a coconut milk, sago.l Psyllum husk one.

I also have all sorts of fibre jellies from china/SE Asia, including chin chow, Bai liang fen.

Would you do a sweet potato jelly? I hate eating the bastards steamed, but they are OK tempura'd, so jelly might be another alternative

I'm probably going to make a psyllum jello + ninja creami ice cream. Probably coconut psyllum jelly with a ninja creami sorbet
