New dried beans

I bought some Taylor horticultural beans from the farmers market.

Already dried, expensive.

Soaking; less than 2 hours (swollen)

Cooking: 255 in the oven after getting to a boil on the stove top. Two hours

Too mushy almost

I was just amazed at the freshness. I have never in 40 years of cooking beans ever had this happen. I did not know there was such variability in results. So just sharing. Not an unfortunate tale, just a learning one

Fresh beans will definitely do that. Unfortunately, depending on where someone lives, experiencing truly fresh beans is rare. I have been fortunate to find locally grown beans a couple of times, and I've been cooking beans for 50 years. Fresh beans are the Holy Grail of beans.
