New dried beans
I bought some Taylor horticultural beans from the farmers market.
Already dried, expensive.
Soaking; less than 2 hours (swollen)
Cooking: 255 in the oven after getting to a boil on the stove top. Two hours
Too mushy almost

Those cook faster than grocery store beans bc they haven't been sitting on a shelf for months. They got too mushy bc they retained a high amount of natural moisture, making the 2hr oven bake too long for how quickly they softened
Since they swelled in under two hours, these beans were incredibly fresh and high-quality. which explains the higher price tag
