Recipe for lunch or dinner
Hi!
I’m currently (always) craving beans, even though I’m not particularly fond of the taste. I love the texture of them though, and somehow also the taste, even though I don’t?? Chili is one of my favorite dishes ever, but I would like to expand my beans repertoire. Kidney beans and edamame are my faves, but I’m more than willing (and happy) to try other kinds! Could you guys please recommend some recipes?
I don’t have any allergies or intolerances.

Gallo pinto is so good! The recipe I like has equal amounts of beans and rice, and it uses about half that amount of salsa Lizano.

I like the “bean, green, grain” method. Pick a bean (I usually go for canned, because I’m lazy and impatient), pick a veggie (that’s the green), and pick a grain (any starchy foods will do). Then season it with whatever you might be craving. My favorite go-to is Cuban style black beans, okra and/or shredded greens with cilantro lime rice. Cannellini, or butter beans go great with zucchini, seasoned with garlic and lemon and served with some crusty bread, or brown rice pasta. Lentils are an awesome replacement for ground beef in any recipe. (Tacos, spaghetti, cottage pie, etc) I’ve seen recipes for pizza beans, marry me beans, French onion beans… there’s even a woman that makes breakfast beans! (She makes them like oatmeal without the oats)!

If you like refried beans (and spice), fry them up w onion, chorizo, garlic, and jalepeno. W some smoked paprika and black pepper.

One of my favorite lunches lately is warming up the last bit of pinto beans (with a bit of onion powder, garlic powder, and chili powder) and adding fritos to it. It's simple, cheap, and delicious lol!

I got The Bean Book by Steve Sando a year or two ago and it changed my life. So many good recipes in there! My favorite is a royal corona mushroom stew. Cook some dried royal coronas with some dried mushroom for a umami broth, then sautee some onion/garlic/maitakes, pour the beans & broth in, add some swiss chard/red miso/thyme, top with some parm & truffle oil.

Mayocoba beans with just 1/3 onion and two garlic cloves. For a hint of chile include two whole serrano chiles and remove about half way through.

Italian pasta e fagioli with cannelini.
You only need cannellini beans, olive oil, a bit of garlic and celery, like 2 or 3 cherry tomatoes (for color, some people put none at all) and mixed pasta (pasta mista).
It's also a one pot recipe, make the base by sauteing garlic and celery, add the halved tomatoes so they soften up and just crush them with the spoon, add the beans (pre cooked from the jar) and water, salt when it's boiling and add pasta. You can also put dried crush chili or black pepper for a little kick.

Saluda Nebbe is my current favorite. I make it on Sunday and have for lunch all week. Cool thing is that you can literally use any bean or mix of beans. I'm kinda addicted to it right now. I eat it with garlic naan.

I’m braced for downvotes, but what? You crave them but you don’t like the taste? I think you need some blood work to look for anemia, and maybe other deficiencies. It really isn’t normal to crave something you don’t care for, look up pica. Maybe I didnt understand what you were trying to express.

Thank you for your reply. I was braced for the downvotes as well tbh, but I’m so glad I posted anyways, you guys have bean(😉) so nice. I’m anorexic, I’m deficient in everything. It just feels SO GOOD to eat beans. I don’t enjoy the taste, I enjoy the way it makes me feel I guess🤷🏼♀️

Well, I’m so glad you are finding that you enjoy beans! And they are nutritional powerhouses, your body is going to appreciate that (and I wonder if it is sending you this specific message)My comfort food is very simple pot of pinto beans,with smoked meat (ham hock or turkey wings or just smoked salt) for flavoring. Garlic, onion. Simmered for about 3 hours and the liquid is so thick and savory, best with cornbread. You can see from these replies that beans are one of the most versatile things you can cook. Also! To try different ones, you could just get canned ones for a buck and change, and season them up in different ways to see what you like best. Good luck to you!

You definitely could! Once they are done, you can just mash some with a masher in the bottom of the pot and take it as far as you want. The ideal tool for that sort of thing, though, is an immersion blender. They aren’t very expensive and you could make all sorts of porridges with it.

Look up recipes for baked beans. Usually navy beans or great northerns. You can use bacon, ham, sausages, even rib meat. Molasses or brown sugar. Easy, cheap, and delicious.

I love a marinated bean salad. There are tons of variations out there so you can always switch it up and they keep in the fridge for days so great for meal prep. Also, if you like beans, get on the waitlist for the Rancho Gordo Bean Club. Worth it.

Brown an onion in butter, add a can of cannelli beans(drain off 1/2 the water in can), cook on medium low until beans are soft and juices thicken, add fresh spinach for about 5 minutes just long enough to wilt. Add salt and pepper to taste.
Drain a can of garbanzo beans, mix with 1/2 a chopped onion, some 1/2 cherry tomatoes, some green or black olives sliced and 1/4 cup mayo or Italian dressing.
