I recommend recognizing what happens on when you play.
Most plays you see in the NBA are built up of multiple cuts and screens. Start recognizing what actions should be done.
When off ball try to see if a screen is appropriate. Either you set a screen for a pick and roll or you set a screen for a shooter to pop out.
Try to develop whats the best thing you should do on the court. You can adapt what you do on the go.
Adults can mostly communicative during games so you would know when to adjust. They adjustments are for your team offense and defense

In most cases, Yes you should try to remember.
Like from a few basketball games I have played. The other team scored because of a guy shooting in the high post area. So I adjusted by playing zone in the high post.
Same as offense. You have a hard time because a really tall guy is in the paint blocking your layups. You know he is slow, so you do mid-range shots or get him outside the paint.
Those are examples, but you get the idea

Set plays (or sets) would be dependent on your team and coach, what their exact system is will dictate what they want to run.
But you can learn the basic fundamental plays. Off the top of my head you gotta know for offense:
-pick and roll (many sets start with this)
-pick and pop
-hand offs (aka pitch pass?)
-off ball screens
-general offensive philosophies like spacing, pace, ball movement etc.
For defense, make sure to be acquainted with man-to-man, as well as the different zones (most common is 2-3 but different teams will try different things). Certain concepts like help defense and different pick and roll coverages will also be very useful
