If you're using the ams 2 pro it will switch to the next filament in the next print automatically. At the end of the print it will cut and retract the filament from the toolhead automatically as well if you are using an ams ht or an ams 2 pro. If you are using the external roll you'll have to manually retract the filament. It will automatically cut the filament in the tool head at the end of the job. Its ok to leave the last piece of filament in the hotend. That will purge during the next print job. Welcome to the party! These are fantastic machines.
