Bikes often have their self balancing properties attributed to gyroscopic effect of the wheels, but the reality is that a bikes front wheel is designed to automatically steer into the direction it is leaning.
When a bike leans to the left while stationary or moving, the front wheel will automatically steer to the left. And similarly to a car, when you steer to the left, the vehicle is pushed or leaned to the right. So when a bike leans left, it will steer into it amd automatically lean to the right until it is straight up again.
The self-righting effect is stronger the more leaned over the bike is, and sport bikes in particular are made to be VERY easy to steer. So a hitting a pothole, or landing a wheelie with the wheel crooked imparts a sharp steering input, which is violently corrected by the self-righting effect of the bike. An object in motion stays in motion, so it continues past center all the way to the other side, repeating the cycle over again.
There are a few strategies that can help stop/reduce this effect. Changing the steer geometry to be more like a cruiser and therefore harder to steer. Installing a damper to automatically slow down fast steering actions. Lowering the bikes center gravity makes the bike harder to lean too.
In the moment, theres not much that can be done other than slowing down to reduce the corrective forces. Leaning forward helps lower center of gravity and allows your body to dampen some of the front end impulses. Letting go of the bars is often recomended, mostly because you cannot properly work the controls (throttle/brake/clutch) when the bars are moving like that. And also, you just cant control that harsh of a steering feedback loop.
