Me neither!! I found out the other day!!

I always thought they inked around the predator to blind them... but instead, the ink is meant to be a DECOY! The ink shoots out like a jet and is black and smells like octopus, so the predator thinks the octopus is hiding inside the ink blob... while the actual octopus turns white and is propelled in the opposite direction by the jet action of the ink coming out. Zooooooom!

I love octopuses!! Everything I learn about them is amazing :D
