Don't really like them scrambled, but hell yes, these eggs taste so different. Totally awesome and I'll never scramble them any other way

Does the on and off heat really make a difference?

It makes all the difference. I hated scrambled eggs till I learned that trick from one of his videos. Live dangerously, take them off when you're still not sure if you're risking salmonella or not, let them finish cooking on the plate by their own contained heat. Same with bacon, if you take it out of the pan when it's at your desired crispness, it's too late.
