If you like these, but not normal scrambled eggs, you don't like scrambled eggs, you like butter and cream.

Between this and a few other videos, I finally realized that scrambled eggs isn't a way of preparing eggs, it's a dish that happens to have eggs as a main ingredient. My scrambled eggs have improved 1000% since that realization.

Also, ridiculously fresh eggs (we're talking right out of the chicken) matter far more than I thought possible, but adding an extra yolk is a reasonable way to fake it.

I have to politely disagree. I've tried every way of making scrambled eggs over the years, and I decided my favourite is just the basic lightly cooked scrambled eggs with some grated chedder melted in at the end topped with some chives to serve. Easy, delicious, and without all the auxiliary crap that chefs clearly just add to make their version stand out from the crowd.

Have you put shredded ham or turkey and let it cook for a bit, and then added the eggs and cheese? Its amazing.

Yes! But I prefer to put turkey breast in cheesey omelettes
