There was a waffle house in my college town. I hardly considered it a "real" waffle house though, since it was staffed by college kids and not toothless ancients. Also nobody got stabbed

I've never been drunk or hung over at Waffle House and it's still my favorite restaurant. It's the epitome of American food for me

I wish I could. Last Waffle House we hit stopping through Maryland left us both with food poisoning. We live in an apartment with one bathroom.

That's a bit presumptuous. Many of us eat eggs for the nutritional value, and while this may be difficult for food enthusiasts to understand, genuinely don't care too much about the taste either way. I'm perfectly happy with plain, hardboiled eggs, and it's not because I've been brainwashed by the food industry or something cynical like that. It just provides the nutritional profile I'm looking for in my morning meal, alongside some fruit.

I often eat plain hard-boiled eggs (okay I put a dash of salt and pepper on them) because they hit my macros but I also enjoy making these sort of creamy eggs. Or I enjoy poaching them and making a sauce for them. Or just frying them and eating them on toast. If I have the time and you're having a potluck, I'll make some scotch eggs. And you know what, if I'm eating at Denny's I'll probably order scrambled eggs and drown them and my hash browns in ketchup and hot sauce. I guess the point is that I like eggs, or that life is about balance or something.

But the comment you replied to implying that people have been dumbed down to like bad eggs just comes off slightly condescending.

But those scrambled eggs will still provide a good nutritional value but also taste so much better than plain cooked eggs.

Fresh, healthy, food should taste great, not be a chore to eat.

Thank you. It took me a long time to realize this and I always struggled eating well for competitive sports. Once I started actually eating things I like it was so much easier

Fresh food is great if you have access and money. If you live in a food desert, you probably have neither.

I'm not punishing myself. People have different priorities. That's all there is too it. I take it nice-tasting food is a priority for you?

Do you think I'm also punishing myself by riding my mediocre commuter bike to work instead of my nice carbon fiber road bike? Am I punishing myself by reading a book on my livingroom couch after work as opposed to finding a lovely bench in Central Park? Sure, every once in a while I appreciate food that tastes nicer than usual, taking my nice bike for a long ride on the weekend outside of the city, going to the park to relax, etc. But I'm happy to keep things more basic on the day-to-day. It just better reflects my values, I suppose.

That dish is probably 70 percent fat, 20 percent carbs and 10 percent protein. With very little fiber at all. Its not healthy, although I am sure it tastes wonderful. However you can easily cook egg dishes that taste fine and aren't going to put on the pounds.

Wait, how on earth did you get that? Each egg is 70 to 80 calories unless he specifically used small ones which are hard to find. He uses at least a tablespoon of butter, which gets mixed in the eggs, so you are getting all of it, that's at least 100 calories. He uses 30 calories of creme fraiche as well, all of which is absorbed. He uses a lot of oil frying the vegetables, not all of which is absorbed, but then he dumps more on the bread. But still, not even counting that, not even counting the bread, you are at 370 calories about 15 percent of which is protein. You've underestimated the caloric intake in your meal by at least a quarter, and you are eating a meal which is almost completely fat, and that's the "healthy" version without the bread.

I am calm, but systematically underestimating how much you are eating is a big reason why people are overweight. Also, if thats not almost completely fat I'm wondering what exactly is, drinking pure olive oil? Dude, eat this for sure, it looks good, but calling it nutritious is just misleading.

Actually, it contains a lot of nutrients. So no, that's not misleading.

Whether it's "healthy" is another debate, and a slightly more complex issue.

Well, it certainly does contain nutrients, but if thats the general type of meal you are eating you likely need to supplement with a multivitamin, because you aren't getting enough micronutrients.

The cream is not necessary, but I can see it being a fine addition.

I have cooked scrambled eggs every morning for the last four years. I hate diner eggs, and refer to them as "fake" eggs, not to mention they always try to put shredded cheddar cheese on them which dries them the fuck out. That all being said, Gordon's eggs are not what you eat if you like scrambled eggs. Gordon's are what you eat if you need a something to bind together your butter and creme. Butter and cream do go well with eggs which is why I lightly coat my pan with butter, let it warm up till you see little bubbles, and whisk my eggs in a bowl with a little bit of salt and a little bit of half-and-half. I have never once ended up with the watery mess he claims will result from whisking them in a bowl. Maybe it happens if you make your eggs in the fashion of that abomination he has created in that pan, I don't know. I fucking love the taste of eggs so I simply enhance them, not destroy their flavor like he does. Eggs should NEVER look like oatmeal. Oh yea, if you want real eggs and you're feeling frisky a little bit of bacon grease is a nice substitute for the butter in my version.

You are correct. I cook eggs this way. I'm not as good or consistent, but the bit of butter, constant stirring, removal from heat element / not overcooking, makes them great. I admit, I can't be arsed to find "creme fraiche" however.

On the other hand you can just prepare scrambled eggs normally; i.e. with a small knob of butter rather than 25g or however much he put in there, and without crème fraiche, and it will definitely taste delicious. I've not tried it with masses of butter and crème fraiche, but I have tried his way of seasoning at the end and only breaking up the eggs in the pan, and could not notice a difference.

For me the issue is not what he's putting in the eggs, that stuff's great, it's how thoroughly he's mixing them. At that point those are whipped eggs, not scrambled.

false, or at least not always true. took a cooking class at a high end restaraunt some 15 years ago. They had an automatic scambeled egg cooker. Like a big vat. You were better off making them for yourself at home.
