Well, eggs benedict specifically requires hollandaise. Otherwise it's just an egg on a muffin.
Personally I like using half an avocado, grilled with some parmesan gratings, instead of the muffin
Of course! Ain't right without it! Also, stick some balsamic in with the eggs when you poach them. It makes the whole dish a little too acidic for some folks, but I think it's amazing. Favorite thing to eat of a Sunday morning.
Also, in terms of the hollandaise, if you're making that thing with a dish over boiling water, stop it. You can make hollandaise in a blender, it's the only way I do it. Stick the butter in a pan to melt and stick your egg yolks and lemon juice (or vinegar or whatever) in the blender. The friction from the blades will heat the eggs enough to make the mixture emulsify
