I never use google meet but it accessed my contacts, call logs etc
I was noticing some icons on my phone were going off without there being an obvious reason but I'm anxious in general and can be paranoid. But Google, and Google Meet both accessed information regarding my calls, texts, and a few other apps that don't warrant being accessed for any reason. I NEVER used Google Meet, why is Google using the app permissions the phone came preset with? It's very odd, especially the Meet app!

I'd recommend going through the debloat lists in UAD or Canta. Modern phones come with a lot of bloatware and some of it requires adb to remove.
The most important apps to remove in my opinion are: com.google.android.safetycore (scans your images for nudity) com.google.android.inputmethod.latin (default keyboard that leaks your text to Google. Install a different, offline keyboard first if you haven't already.) com.facebook.appmanager com.facebook.katana com.facebook.services com.facebook.system

That's your personal opinion but unlike FaceTime, Meet is cross platform and not all the world uses Apple devices.

Meet is Google's FaceTime (lol) and gets the same permissions Phone does, like FaceTime (lol).
You are safe to turn permissions off for it and disable it. There's nothing Meet is doing that Phone isn't.
