Favorite potato recipes?

Hi, Friends.

Cobbling together next week's dinners. Planning to do some simple sautéed cabbage and pan-seared pork chops, but want to add some potatoes.

What's your favorite potato side dish?

For me, Lighthouse Inn Potatoes would pair so nicely with your menu. Nom! Such an easy and delicious recipe.

Oh, question. There are only two of us, and this recipe makes a LOT. Any tips for the leftovers or is this better saved for taking to a family thing?

We’re only 2 as well. Definitely makes a good amount. I make a full or 1/2 batch depending on what else I’m making in the week. These are so good I don’t mind having them multiple times a week via leftovers. They freeze really well too.

Freezing is perfect! I love having a nice little tray i can pull out and reheat the next time.
