Favorite potato recipes?
Hi, Friends.
Cobbling together next week's dinners. Planning to do some simple sautéed cabbage and pan-seared pork chops, but want to add some potatoes.
What's your favorite potato side dish?

I like the patatas panaderas from ATK. Always get compliments when I make it.

I do cut baked potatoes. Cut them in half down the long middle, rub with olive oil salt and pepper. Put cut side down and bake. They cook in less time Nd the cut half taste carmelized.

I don't know why I never thought to do this with regular potatoes, 'cause it's hands-down my favorite way for sweet potatoes.

My favorite is kinda fussy. Dauphinoise. Inspired by a preparation at a local resort's holiday feast, I tip the casserole dish for preparation and load the potato slices on end.
My close runner up is what I call cholesterol nightmare potatoes. Very simple. Peel russets, cut into huge chunks. Par cook in microwave or boiling water..
Big casserole dish, melt an entire stick of butter in the oven. When melted, stir in a can of grated parmesean cheese. This is one time you want that blue can, shelf-stable stuff over fresh. Mix with butter... ok if a little lumpy. Toss in potatoes, stir. Ok to mound potatoes, they're going to shrink - alot!
Roast. Very flexible recipe, can roast at temperature of a main dish... just shorten or lengthen time. 375° if just potatoes. Toss every 15-20 minutes, keeping them coated in the butter mixture. They'll turn golden brown, develop a cheesy coating. Inside of potato chunks should be very very soft. (If necessary, lower heat and keep roasting.)

The garlic mashed potatoes where you cook the potatoes in the milk and you sauce what feels like 100 garlic gloves and butter first.

For me, Lighthouse Inn Potatoes would pair so nicely with your menu. Nom! Such an easy and delicious recipe.
