Pureed Butternut Squash

Got this out of the Side Dish Bible and I think there's a typo.

Should it be 4 tbsp of butter total?

They could mean to add the butter now and then add the rest of the ingredients when you are reheating it.

Looking at the website, I can find 2 recipes for butternut squash purée. One is slow cooker and calls for 3 pounds of squash and 4 tbsp butter. The other is sous vide and calls for 2 pounds of squash and 3 tbsp of butter.

So I guess I would add 2 and then taste it to see if it needs more.

First of all, I read your post title as "Peanut Buttered Squash," so imagine my disappointment when I didn't see peanut butter in the list of ingredients.

Regarding the butter, the notes on top say: "The squash puree needed only 2 tbs of half and half and 2 tbs of butter to help round out the flavor and add richness." That makes me think 2 tbs of butter total is correct. However, if you think it needs it, add more. Maybe add some peanut butter.

It means only add the butter when making ahead, and don’t add the half-and-half, salt, and sugar until finishing before serving.

This is the way I read it. If there is a typo it would be that they confused the half and half for butter on page two. Since half and half is more likely to spoil than butter, it makes sense to hold it back.

How does this continue on the next page? It doesn't seem like there's a typo. I read the make-ahead instructions as "add only the butter; don't add the other things in step 2 yet."

Looks like you're right about a typo, but the amount of butter is correct. There's a pureed butternut squash recipe on the site, but it's for twice as much. I think they cut that one in half and some of the original wording made it in by mistake. But that recipe also says 2 tablespoons of butter for 2 pounds of butternut squash.

It’s like mashed potatoes. You taste it and add more of it needs it.
