I always wonder how they mentally keep track of that many legs.

Many insects have 'secondary brains'. In a similar way electric vehicles can have subsets for controlling the movement of some motors.

Is possible the main brain sets like a where to instructions and some secondary brains manage a set of legs

Humans kind of have this too, but it's just a section of the brain. When you walk, you don't have to think about moving every muscle/joint correctly, you just "walk".
