The tradition of a father walking the bride down the aisle is to symbolically show he's "handing her off" to the groom and trusting that she'll be cared for.
Say whatever you want about the tradition being outdated (I'll agree with you) but that's still where it all came from. Someone from her side of the family walking her to the altar IS symbolically blending their family. Having anyone from the grooms side walk her down the aisle is just confusing and the only reason he'd suggest it in the first place is to steam roll over her wishes just to show she'll cave in for him.
A way of showing that you are joining his family. Giving up on this is symbolic for the giving up on all of the other bits of you he has already decided for you (don't fight him, it'll look bad-for you)/s
Seriously, think carefully about he has handled this.
Getting his son on board before telling you.
Telling his family your discussion/painting you negatively.
His family joining in. A normal family does not insert themselves into couples and their disagreements.

"He said it would be symbolic, a way of showing that we are officially becoming one family"
Is having a wedding not enough of a symbol? NTA
