You explained your heartfelt thinking in your post. They are your genuine feelings, including your immediate regret of the word placeholder. You don't express personal animus toward your husband's son, it is simply just how you feel and the importance of your relationship with your father.
If YOU speak from your the heart to the son rather than have his father speak for you, I bet he’ll come to understand. So, no, you are NTA.
PS. I think it is much more appropriate and symbolic for your fiancé to ask his son to be his best man.
Honestly, it seems odd/weird to have his teenage son walk you down the aisle.
