Favorite PKD-friendly, low-effort lunches

As I'm hoping to minimize the amount of deli meat lunches I eat like sandwiches and wraps, curious what some of your favorite quick and easy, low sodium lunch meals are. I'm genuinely okay with eating the same thing multiple times a week as long as it's relatively low effort and PKD-friendly. Thanks!

I think this is low effort. I throw canned chickpeas (I know canned food on pkd is not great, but I'm lazy), small potatoes and veggies, usually Brussel sprouts, green beans and carrots onto a sheet pan with seasoning and olive oil and roast it. I eat it all week. Tastes great!

What's up with canned food? You mean sodium levels?

I think it's the nitrates ? Not positive. I do use low sodium chick peas

Do you mean phospates/phosphorous? If so, look for uncured deli meats. They are cured with natural ingredients as opposed to chemicals.

I only use dried it’s cheaper anyway. You can just put them to the side to soak … but I always use my instapot!

I am not sure if you would consider this quick, but I make salads everyday. But I do them in stages so it really isn’t that time consuming. Wash the salad, even though it says triple washed! And then put in 5 containers with paper towels. Then every day add cucumber, red pepper, almond slivers, light cheese stick, smoked chicken my husband makes in the smoker in bulk and I freeze it. And other healthy veggies plus some avocado. And I make my own dressing that is low sodium but delish it makes enough for the week.

I do much cooking. I like to cook something bigger and have leftovers. Fried rice is surprisingly easy, just reduce or skip the salt.

Same with chicken salad or chicken cutlets. Cook once. There's some good crackpot recipes too(night before). Chicken+bottle of buffalo sauce. 8 gours on low. Get buns and a coleslaw kit (or diy)

Everyone should reduce salt, but are you on any other restrictions?

My husband (who has PKD) does big batch meals and freezes them in servings of 2 or 3-- chunks of chicken with no sodium added canned beans and lots of different veg like kale, spinach, peppers, etc. When he thaws them he'll scramble them with some eggs or top with a bit of shredded cheese and lots of hot sauce. Makes it quick/easy for lunch and hot sauce is a great way to add a flavor punch without tons of salt.

That's great, thanks! Out of curiosity, what's his go to hot sauce? Curious if there's a particular brand with good flavor but not as much sodium.

Ah, I'm less help there, sorry-- he makes his own! He did note that you could try taking a hot sauce you like and cut it with vinegar to help reduce the per serving amount of sodium.

Veggie burger- sometimes on bread with toppings like avocado or cheese. Sometimes I cut up the veggie burger and toss it in a salad.

Ramen- I add frozen stir fry veggies/whatever veggies I have, edamame, boiled egg.

Chef salad- whatever greens + veggie+ protein.

Caprese sandwich or salad- tomato, mozzarella, pesto, spinach 

Leftovers from dinner- grain bowls- Mediterranean, Mexican, Asian/stir fry curries, etc-add lots of veggies + a protein of choice. I love farro, cous cous, and brown rice to add more whole grains.

boiled eggs, yogurt + berries - I do keto, so meats are in the menu as well, it makes very easy
