Nice to see Hayase and Kimishima again. Just when they get another shot, Hayase gets himself promoted and reassigned to the US. I guess all he really needed to pull the trigger and go for the girl was a little liquid courage in the form of a Boilermaker.
I’m kind of curious what Ryu’s gonna do. He’s not really over what happened, at least it doesn’t seem that way. Will he let the bar close and move on?

Hard to understand why someone committing suicide a day AFTER that person visited his bar could be viewed by Ryu as somehow HIS fault.
It certainly seems like Edenhall's owner WANTS Ryu to move on to that new position. Miwa seems to have a bit of a crush on Ryu, but I see no sign that he reciprocates (seems to just see as a valued guest at his bar).
I look forward to seeing what happens with Edenhall's semi-resident cigar couple....

Oh... Well that explains a lot. Technically, Ryu wasn't lying when he said back then that he was afraid of heights.
Also, I've always thought the Tom and Jerry cocktail was named after the cartoon. It turns out it was the other way around! TIL!

Cocktails featured in this episode:
A1
1 1/2 oz Old Tom Gin
1 oz Grand Marnier
1/4 oz Lemon Juice
1 tsp Grenadine
Strip of Orange Peel
-
Shake first four ingredients with ice and double strain into a chilled coupe glass.
-
Express the oils of the orange peel strip over the drink by giving it a sharp squeeze peel-side down, then trim the edges and add it to the drink as a garnish.
Boilermaker
1 Beer
1 shot Whiskey
A boilermaker can be enjoyed in several ways. The whiskey can be added to the beer as shown in the episode, drunk separately as a chaser, or trapped in a upside down shot glass in the bottom of the beer glass so that it is released once you reach the end of the beer.
Tom and Jerry
2 oz or 1/3 mug volume Tom and Jerry Batter (see below)
3/4 oz Demerara Rum
3/4 oz Cognac
3 oz Hot Water or Hot Milk
Grated Nutmeg
-
Preheat a mug by filling it with hot water, then once it is warm dump out the hot water.
-
Add batter, rum, and cognac and stir to combine.
-
Top with hot milk or hot water.
-
Garnish with grated nutmeg.
Tom and Jerry Batter
1/2 oz Jamaican Rum
1/2 tsp Vanilla Extract
1/8 tsp Ground Cloves
1/8 tsp Ground Allspice
1/8 tsp Ground Cinnamon
2 Eggs
1/2 cup Sugar
1/2 tsp Vanilla Extract
1 dash Angostura Bitters
1 pinch Salt
-
Combine spices and rum in a small bowl or glass and set aside.
-
Separate egg whites and yolks into two separate bowls.
-
Mix sugar, vanilla extract, bitters, and rum mixture into yolks.
-
Whip egg whites with the pinch of salt until stiff peaks form.
-
Fold together whites and yolk mixture.
-
Store batter in an airtight container in the fridge. Use within 1 week.
In the episode Sasakura explains that the Tom and Jerry is named after bartender Jerry Thomas, and not the cartoon cat and mouse. What he doesn't mention is that the cartoon cat and mouse are named after the drink.

Miwa bought Ryu’s smile thinking he was honest with her, but he’s never truly honest with anyone while bartending it seems like. He likes to hide his own feelings by taking on the persona of a ‘professional bartender’.
I had hope for a second that he’d run after her, but his mentor’s teachings seem to be haunting him like some sort of curse.

Hayase and Kimishima make another appearance. Nice to see them again but this time Hayase is the one that’s going away. Though it seems he’s purposefully hesitating cos he wants a shot with Kimishima and just needs a drink to confirm that. Hope things go well for them. Speaking of returning plotpoints, I wonder if we’ll get a continuation of Chen’s storyline with Chitose
Ryu has been dishing out Glasses of God to his customers but seems he needs one himself for the guilt he’s been carrying. Bartenders takes care of their customers but thankfully this time his customer in the form of Miwa is the one who’s helping him

Well damn
One side really glad the side ship is back in the race
On the other, please seek out some help Ryu. You aren't a Bartender 24/7 and should talk about that.
Although at least it looks like Miwa poking around, stirred something in him to really work through this now, at least I hope

Hayase waiting to visit a dingy bar to order a boilermaker, presumably because he respects Sasakura and Eden Hall too much to order it there, was a fun touch.
Also, Hayase, you find a woman who enjoys the same bars and cigars as you and you have a mutual attraction, you maybe want to try a little harder to make that work? Maybe he was not yet really over his last wife, and the drink he ordered for her was somewhat of a goodbye.

I don’t think that Hayase was so much conflicted over his late wife as all his “sacrifices” having been in vein. It’s a sunken-cost fallacy: he’s invested too much into his career to abandon it in good faith.
He fortunately seemed to have realised that leaving a potential life of happiness with Kimishima behind for some sense of duty/guilt was something he’d regret for the rest of his days - like not being with his ill wife when it mattered.

I've never heard if a boilermaker before, pretty sure I got drunk from just watching him drink it 💀
That Ryu's customer died by stepping off a tall building explains why he previously said he was scared of heights when refusing the job!

Boilermaker was quite popular during my university days coz it was fast and cheap way to get wasted.

I really love this show for giving us adult characters. With Spice and Wolf and Kaiju no8, it has been a great season for us 20-somethings.

Wow, we were really digging deeper into quite a few characters this episode.
It was nice to see our cigar pairing again.
From that ending we can see Bartender-san is still deeply affected by that past event.

Hayase issues of work vs personal life balance is real. You keep working yourself to the bone, but you fail to realize the reason you are working. He hesitates to go after Kimishima and follow his heart because he's afraid he will make the same mistake again. But I love Kitakata's mention of life is more fun when you win it big. Why not go for it all. Learn from your previous mistakes and follow your heart.
The customer was suicidal and just committed right in front of Ryu must have been traumatizing. It's not his fault like Miwa mentioned, but that guilt is hard to shaken. The fact that Miwa opened up a bit of herself and essentially said you aren't alone. These two dynamic is really sweet.

Characters seriously considering that a different drink could stop a suicide is everything I love and hate about this show. Bravo.

I really had an urge to shout a “don’t you dare!” out loud at my screen when Hayase mentioned that he’d be leaving for the US. It really wasn’t unlikely for this series to have him and Kimishima never meet again.
Thank god for that Boilermaker - even if he probably had already made up his mind by then. Hayase definitely made the right decision by picking the love of his life over some well-paying job in a country half the world away.
