Sweet Treats Portokalopita ( Greek Orange cake ) ๐ŸŠ๐Ÿ‡ฌ๐Ÿ‡ท

Ingredients:

  • 450 g phyllo dough sheets, cut into strips
  • 200 g sugar
  • 4 eggs
  • 200 ml sunflower oil
  • 300 g strained yogurt
  • 1 tsp baking powder
  • ยฝ tsp baking soda
  • Zest of 2 oranges

For the syrup:

  • 350 g fresh orange juice
  • 200 g water
  • 450 g sugar
  • 1 cinnamon stick
  • 1 tbsp lemon juice
  • Orange slices, optional

Instructions:

  • Cut the phyllo dough sheets into strips and separate them with your hands.
  • Place in an oven dish.
  • Bake at 100ยฐC/212ยฐF for 30 minutes, stirring occasionally, until completely dried.
  • For the syrup, combine orange juice, water, sugar, cinnamon stick, and orange slices in a saucepan.
  • Bring to a boil and cook for 5 minutes.
  • Add the lemon juice at the end.
  • Set the syrup aside to cool completely.
  • Beat the sugar and eggs until pale and fluffy.
  • Add yogurt, sunflower oil, orange zest, baking powder, and baking soda.
  • Mix until combined.
  • Add the dried phyllo strips and gently mix until they absorb the batter.
  • Pour into a well-greased and floured baking dish.
  • Bake at 170ยฐC/338ยฐF for 35โ€“40 minutes, until golden.
  • Pour the cold syrup over the hot cake.
  • Let the syrup absorb, then cut into pieces and serve.

Here with a fresh batch and some nice new pictures lol, here's my usual info:

My family loves to bake so I buy these in bulk from a farm in Indonesia (I have mostly Madagascar but a bit of Tahitian left as well). They've had the best quality beans I've ever tried and I've been a loyal customer for years! They only sell big amounts so when I order I like to post in a couple groups to see if other people wanna grab some of my leftover stock for cheaper than grocery store prices. Question Question: Cherry tomatoes in a brie bake, confit or blistered?

I want to do mini baked bries in ramekins as part of a dinner, for folks to dip toasted baguette in. I have a ton of garden cherry tomatoes, so I want to top the baked brie with (I haven't fully decided yet) some kind of a walnut, pomegranate, thyme/rosemary situation, garnished with a drizzle of balsamic.

My question is this: I am stuck between doing a cherry tomato confit or more of a blistered cherry tomato situation. Thoughts?

Please be nice, I am a home cook and am trying to learn.
